Quiche Royale Recipe

Today I'm going to share with you Quiche Royale recipe. It is not a planned recipe to share with you. I had to make this recipe for my baking class. However, I really liked the result and decided to share with you and also wanted to save this recipe for myself.
In this recipe we are going to use "Pâte brisée" which is basic French dough consist of butter, flour and water. Preferably, because we don't need too much gluten development in our dough, we use pastry flour which has lower protein content. Another hint for better result is the water temperature. It should be cold like around 60 ºF. And also it is important to blind bake your pie.
Ingredients

Dough Ingredients:
340 g Cake flour
170 g Unsalted butter
37 g Egg
80 g Cold water
3 g Salt
Method: sift flour, add cold cubes butter and rub until well combined. mix egg, water, salt and mix everything together. Do not over mix.

Filling Ingrediens:
2 pcs white onion
30 g. vegetable oil
8 each fresh thyme springs
160 g soft goat cheese
Method: Slice white onion caramelize with vegetable oil. Add salt and pepper to taste.

Royale Ingredients:
70 g Eggs, whole
25 g Egg yolks
3 g Salt
pinch Nutmeg (to taste)
175 g Whole milk
160 g 35% cream
Method: Blend eggs, egg yolks, salt and nutmeg until it is smooth. Once it is smooth, add milk and cream and whisk it. Pass through a fine sieve.
Once you made the dough, it is better to make blind baking which is pre baking. Roll out your dough into 1/2 cm thickness and bake into oven for 20 min at 370 ºF. After it turns golden brown, take out and put your filling and royale. Cook until your top is rise and puffy. You will see the steps picture by picture. In addition to this recipe, you do not have to stick filling ingredients at all. You can add or remove what ever you want, such as scallion, parsley, soft or hard cheese, pepperoni or what ever:)
