Pickled Red Peppers

Hi everyone! Everybody has something to do in these self-isolation days because of the Covid19. Me as well, doing a lot of things in the day. Reading book, making puzzles, watching Netflix more than ever, and doing my favourite thing which is cooking. In the meantime, I improve myself on baking and pastry. And gained many pounds :) (not kidding btw)
In this post, I'd like to share one of my favourite pickle recipe. It is my favourite because it is fast. Compared to other pickles, you can eat this right away. And it's delicious. It is a technic which is unfermented, and directly acidifying.

Ingredients
1 kg Sweet Seedless Red Peppers
200 ml Apple Cider
50 ml Olive Oil
50 ml Canola Oil
1/2 tbsp Kosher salt (preferably adjustable)
40 g Parsley
7-8 cloves Chopped garlic

Instructions
Cut the peppers into half.
Put apple cider, salt, olive and canola oil into a pan and boil them.
Add peppers into the pan and cook for 7-8 mins.
Take the peppers out of the pan and let them get cooler in a bowl.
Add parsley, and chopped garlic then mix.
Stuff the peppers into a jar.
Pour the oil and apple cider mix that is left in the pan into the jar.
Close the lid of the jar.
To be honest, I am really satisfied from the result. I will do the exactly the same when I make this recipe again. I hope this recipe help you making delicious pickled peppers.
